Docs: Add Anthropic provider instructions credentials create endpoint

The credentials Swagger documentation is missing the Anthropic provider. This omission creates confusion on how to add the API key for the Anthropic provider.

- Update the credentials creation endpoint in the Swagger docs  
- Include instructions for adding the API key for the Anthropic provider
