fix: refresh test data configuration

Description

• Update VS Code color theme for remote status bar and activity bar top
• Add new color settings for command center and debugging status bar
• Change default test data BASE_URL to tracker-demo.bananaops.cloud
• Simplify and rename services across teams (payment-service → api-gateway, user-management → auth-service, etc.)
• Update environment names to match actual deployment stages (tnr → TNR, uat → UAT, add recette)
• Refresh active locks service references to match updated service names
• Adjust event generation time window from 35 past days to 5 past + 30 future days
• Reduce default events per day from 10 to 8 maximum
• Use predefined version list instead of random version generation for deployments
• Add Jenkins and New Relic to deployment and incident monitoring sources
• Expand priority ranges for configuration drift, RPA usage, and operations
