Removes the pnpm override block by upgrading development dependency parents that now resolve patched transitive packages themselves.

No override-backed advisories are reintroduced. The remaining audit findings are independent upstream chains documented in the Transformers runtime migration: sharp, onnxruntime-node > adm-zip, and Jest > brace-expansion.
