fix: align project naming to AIOps Lab and add commercialization roadmap - #21

Docker/Kubernetes identifiers, docs, and the quickstart clone URL still referenced the old ai-infra-starter-kit name instead of AIOps Lab, blocking a clean public release. Also adds a phased commercialization roadmap (audience -> wedge product -> paid team tier) with milestones, success metrics, and exit criteria per docs/19 and docs/20.
